
We had our first snow storm this past Wednesday, the type of weather that craves comfort food. I’ve spent the past 6 years eating out – but alas times have changed! Now I have to be creative and think back to the meals that bring back the great memories of dining out with friends and family and recreate it in my own kitchen. As with all the food I prepared in the past, I always strive to kick it up a notch. I found this great lamb shanks in my freezer (a remnant of a meat share I sampled last December) that certainly fits the elevated comfort food I was looking to prepare.
Most of the recipes Annalisa and I feature in our website utilize our powerful kitchen assistant the Thermomix. Why? This kitchen machine just makes light work preparing chef quality dishes! (For the doubters – just check out our social media postings.) The integrated Cookidoo app has a large global community of users. So it is not a surprise to find the recipe for my lamb shanks.
Thermomix does the heavy lifting…
The Thermomix chopped and then cooked the mirepoix to perfection. The accurate temperature control ensured no burning of the flavorful contents. The braising liquids were then carefully weighed into the fragrant mirepoix. While the Thermomix simmered, I gave the lamb shanks a quick sear in my dutch oven (yes the dutch oven I retired from bread baking because of the Challenger Bread Pan). Next step was to combine everything in the dutch oven. The braising process took about about two and half hours in a 325°F oven.
I served the braised lamb shanks with Roasted Garlic Parmesan Mashed Potatoes. The best mashed potatoes I made so far and another Cookidoo recipe! The absence of leftovers is clear validation of another successful chef quality meal! ~ Michelle
