I grew up in a town minutes from the Amalfi Coast. This region is very famous for its citrus groves. This recipe is inspired by the sweet and powerfully aromatic Amalfi lemons. In Amalfi, we have a pastry called Delizie al Limone (Lemon Delight) made with sponge cake and lemon cream. I transformed this regional pastry into a cookie version that’s crumbly, slightly sweet with a lemony aroma and taste. Every bite of this cookie brings me back to my childhood in Italy. ~ Annalisa
